The production of Cognac begins with harvesting and fermenting the grapes. This is followed by double distillation, resulting in the eaux-de-vie. After distillation, the spirit is immediately placed in oak barrels from the Limousin or Troncais regions, known for their porosity and high tannin content. The aging period in these barrels determines the Cognac quality designation: VS (Very Special) - 2.5–7 years; SOP (Very Superior Old Pale) - 4.5–12 years; XO (Extra Old) - 9–40 years.
Cognac is sipped slowly to fully enjoy its aroma and flavor while showing respect for the intricate and masterful production process. It is recommended to serve Cognac at room temperature in a specially designed tulip-shaped glass.
