The journey of brandy begins with selecting quality grapes or fruits. The terroir—the unique climate, soil, and geography of a region—imbues the raw material, creating a distinctive bouquet of flavors and characteristics. Whether it’s the juicy grapes of Cognac, the aromatic plums of Slivovitz, or the regal apples of Calvados, terroir plays a central role in shaping the character of the brandy.
Brandy is divided into several subcategories: cognac a grape brandy produced exclusively in the Cognac region of France; armagnac the oldest type of brandy, produced only in the Armagnac region of France; such as plum brandy (Slivovitz) and apple brandy (Calvados) fruit brandies.
In addition to region and raw material, brandies are also classified by age: VS (Very Special) – 2.5–7 years; VSOP (Very Superior Old Pale) – 4.5–12 years; XO (Extra Old) – 9–40 years.
